Cucumber Blueberry Salad With Honey Mustard Sauce

YUM! That's what I have to say about that.. This recipe came to my brain on a whim and I'm sure glad it did. :) Everyone really really liked it for the fourth of July.. Now if only I had written down what I had done or dessert then I would be a very happy camper. :)
It was a wonderful day with family and we played Crocket(is that how you spell it??) all day.. It was great!! Except a sore back the next day.. But man oh man it was fun. :)

Anyway.. without further ado.. (sorry so short..) The RECIPE! :)

Cucumber Bluebery Salad With Honey Mustard Sauce
3/4 - 1 cup of Blueberries
2 Sliced Cucumbers
1 Chopped Red Onion
For the Sauce:
1Tsp Poppy Seeds
1/4Cup Pesto Vegenaise(Or plain)
2Tbsp Honey(Or Coconut Nectar or Maple Syrup for Vegan)
1Tsp REAL Lemon Juice
1Tsp Apple Cider Vinegar
1Tbsp Dijon Mustard
Fresh Basil Ribbons? (thought this would be delicious but I'm out.)
1. Chop slice and prep all veggies. Toss together in Medium sized bowl.
2. Mix together all sauce ingredients in a small bowl.
3. Toss sauce onto veggies and Mix.. Top with Basil Ribbons (optional).
4. Refrigerate for one hour or so.. Or enjoy presently. :)
5. ENJOY! :)

  1. yum, sounds good! you were right about my grapeseed oil veganaise... it just has a weird flavor.. will never get that again... i actually threw it out... gross. i think i might have told you what we did for the fourth... but just in case i didn't.... we had matt's sister over, and her new husband, and his family. it was wonderful! the day after the fourth was a huge family reception to celebrate their marriage :) it was a fun and very eventful weekend!
