Chia Seed Pudding :)

So... if you haven't ever made chia seed pudding... I suggest you DO!!! It is soooo easy and so good and really filling!! Put it in a bowl with some fruit and before you know it not only will your gut be happy and healthy but you as a whole will be happier and healthier for it. :)
Chia Seeds are amazing little buggers. They are full of good fatty acids.. protein.. Fiber.. WOW! Who knew all that would come from the seeds of a chia pet??? Well I am grateful because I LOVE pudding.. especially Tapioca pudding and I can't have it because all the dairy and sugar and everything else that makes me feel sick and nasty.. So.. I propose we put down the bowls of tapioca and go buy ourselves some chia seeds a?? Lets get going on some chia pudding. :)

Cinnamon and Vanilla Bean Chia Pudding :)
 
Ingredients:
 
Will Need To Soak!
 
1/2 cup Chia Seeds
2 cups Milk of choice (make sure its thick and creamy such as canned coconut milk or almond milk! If you want to make home made nut milk.. soak nuts or seeds of choice for 2-4 hours.. blend up 3/4 cup of nuts with 1cup water and you will have a REALLY creamy milk for your chia pudding.. you can use store bought milks.. Like I used Califia brand for mine. If making your own.. blending up soaked dates into it would be really good too!!)
1/2 Vanilla Bean (Scrape out the little black seeds)
1 1/2 Tsp Vanilla Extract
1 Tsp Cinnamon (or more to taste)
Fruit of Choice (For topper)
Container with lid
 
1. Mix thoroughly all ingredients except chia seeds.
2. Add in chia seeds.
3. Put lid on container.. Shake and put in the fridge. Soak overnight or at least like 4 hours. :)
4. ENJOY! :)
